 Simple Fall Cake Pops
Makes 48 pops

INGREDIENTS
1 box (517.38 g) (18.25-ounces) cake mix*
1 tub (455 g) (16-ounces) frosting
48 lollipop sticks
Marshmallow fondant
Confectioners’ sugar for rolling
Food colouring
Candy melts
Assorted candies for decoration
Food marker (optional)
Styrofoam for holding cake pops

*Tip: Good flavour combinations are chocolate cake with chocolate frosting; spice cake with vanilla frosting; red velvet cake with cream cheese frosting; lemon cake with lemon frosting.

DIRECTIONS

  1. Bake and cool cake according to package directions. Crumble the baked cake, and fully combine with icing, stirring with a mixer or by hand.
  2. Use a 3.81 cm (1 1/2”) cookie scoop or tablespoon to form 48 balls. Roll each between your hands to smooth and shape.
  3. Place the balls on a baking sheet and wrap well with plastic wrap. Refrigerate until ready to decorate, or freeze for several months for later use.
  4. Melt the candy melts according to the package directions. Dip one end of a lollipop stick into the melted candy, then stick it into a cake ball.* Repeat with remaining cake balls and lollipop sticks. Prop up the pops in a block of Styrofoam and return them to the refrigerator to set.

*Tip: This step prevents the cake balls from sliding down the stick once they’re decorated. If you’re going to cover the cake balls in fondant, don’t do this step until the ball is covered.
